Fishy ..Fish Samosas
I have been quite busy for the past two weeks with my younger one having one of those nasty viral fever.He’s recovering slowly .Its today that I sat back to type out one of my best recipes.This is one of my best and I should say that I have quite a lot fans here for this one.Here in Munnar now the Afternoon rains or should I say the evening rains have started..and theres the beautiful Misty misty hills…:)Everything so green so bliss…:)

Fish Samosas
For the filling
1/2kg King fish
4 green chillies chopped
1 medium piece ginger chopped
8garlic cloves chopped
3 large onions chopped
1/2 tsp turmeric powder
2tsp black pepper powder
1tsp garam masala powder
2 potatoes pressure cooked and mashed
curry leaves
salt to taste
For the crust
2 cups of Wheat flour
1tbsp ghee
salt to taste
Oil for frying
Make a soft dough with wheat flour,ghee and salt by adequate amount of water.
Pressure cook the king fish with 1/2 tsp turmeric powder and salt.Debone the fish and slightly pulse it in a blender.Heat 3 tbsp of oil in a wok/kadai add in the chopped garlic ,ginger and green chillies and fry.When the color starts changing add in the chopped onions and saute till translucent.Now add the turmeric powder and pepper powder and saute till an aroma comes.Add in the pulsed fish and blend in with the masala.Now mix the mashed potatoes into the fish masala.Sprinkle garam masala powder and garnish with chopped curry leaves.Mix well till well incorporated.If you feel the spice is not enough add a little more of pepper powder and remove from heat.
While the masala is cooling down ,make lemon sized balls of the wheat dough.Heat a frying pan on low flame.Roll out balls into discs and cut them into half.Slightly cook both sides of the cut dough pieces.Take care not to over cook.Take one piece in hand and fold both ends inwards as shown in the picture.This makes a pouch.You can stick the ends one on the other with plain water.Stuff the pouch with the fish filling and seal the samosa pouch by folding the lower side inwards and sticking the upper end with water.Pinch the corners of the samosa and now they are ready to be fried out.
Heat oil for frying in a wok and drop in the samosas.Fry them till they are golden brown and drain out the oil on a tissue paper.Crispy Fish Samosas are ready to be munched 😛

“Lip Smacking dishes of Kerala”!
Vendakka(Okra) curry
1/4 kg okra cut into medium sized pieces
1cup shallots sliced
2 tomatoes cut into small cubes
1tsp Sambar powder
1 1/2 tsp coriander powder
3tsp Kashmiri Red chilly powder
1/4 tsp Yellow turmeric powder
tamarind(gooseberry sized)
1/2 tsp mustard seeds
1/4tsp fenugreek seeds
oil for frying
curry leaves
salt to taste
For grinding
1 cup grated coconut
Heat a oil in a kadai ,deep fry and separate the okra.Grind the grated coconut into a fine paste.
Heat 3tbsp of oil.Add in the mustard seeds and let it splutter.Then in goes the fenugreek seeds and curry leaves.Add in the sliced shallots and saute till translucent and spoon in the yellow turmeric powder, chilli powder, sambar powder and fry.Now fry in the tomatoes till cooked and add the coconut paste with 2 cups of water and stir.When the curry starts to simmer add in the fried okra pieces and the curry is ready to served with steaming rice.:)

Fruity choco muffins with a punch!
Hi foodies..I’m back after my holiday break.July has been a month with heavy rains in Munnar.The holidays fly by with ease and I’m all over again in my busy bee schedule. Today’s post goes out to the Sweet punch team.The recipe for this month sought out for strawberries..but the sad prt was that I couldnt get hold of any to pop into my batter.So I thought of giving it a bit of twist.If you love a fruit blast for your kids heres one Banana Apple choco muffins..
Banana Apple Choco Muffins
Preheat oven to 350 degrees F . Place a rack in the center of the oven. Line a muffin pan with paper liners .
Mini Aloo Bondas for the monsoon!
The rains have started pouring out here..June and July being the monsoon months in Munnar. I really hate goin out when there are showers in Munnar. Some hot chocolate for the kids and tea for us are the best opted drinks with snacks..
The recipe that I have shared here are the ones that comes out from my Mom’s diary of recipes.This spicy Potato snack is one of my Monsoon favs!
Mini Aloo Bondas
For the filling
4-5 potatoes pressure cooked and mashed
5-6 green chillies finely chopped
a small piece of ginger finely chopped
4 cloves of garlic finely chopped
3 large onions chopped
cilantro chopped
1 tsp mustard seeds
1/4 tsp red chilli powder
1 tsp garam masala
1/2 tsp turmeric powder
a pinch of asafoetida powder
1 tsp lemon juice
salt to taste
For the batter
1 1/2 cup of gram flour
2 tbsp of rice flour
1 tsp red chilli powder
1/2 tsp baking soda
Water
salt to taste
Oil for frying
Heat 1tbsp oil in a pan.Pop the mustard seeds and add the asafoetida powder and stir.Add in the chopped large onions,green chillies,ginger and garlic and saute till the onions turn translucent.Add in the turmeric powder,chilli powder and garam masala .Stir and add in the mashed potatoes.Mix well with the required amount of salt and chopped cilantro till well incorporated and keep it aside.Add in the lemon juice and mix.
While the filling cools, mix all the ingridients required for the batter in a bowl.Slowly pour in water to make a batter of thick consistency .Make lemon sized balls of the filling.Dip the balls in the batter and deep fry them in oil.
Your Potato balls are ready to be served with ketchup.! 🙂

I bet there might be very few who might not crave for brownies.Me and my choco freak kiddos are all huge fans of the brownie family.This is one recipe that never fails to pop in my kitchen ….at least once in a week.When I’m short of lava cakes ..I make these brownies in my microwave..Spoon it into a bowl with a scoop of vanilla ice cream…yummmmm..Chocolate Bliss!
Now I’m gonna stop droolin..and here’s the recipe
Brownies
1stick of butter(unsalted)
2 squares of unsweetened chocolate
1/2 tsp baking powder
3/4 cup all purpose flour
1/4 tsp salt
1 cup sugar
2 large eggs
1 tsp vanilla extract
Preheat oven to 350 degree Fahrenheit.Line a square baking pan with aluminium foil(make sure that at least 1 inch of the foil is overhanging the top of the pan.).Double boil chocolate and butter whisking occasionally until both are completely melted.Keep it aside to cool.
Combine all dry ingredients in a small mixing bowl.Whisk together sugar and eggs and mix in the choco butter mix along with the vanilla essence.Mix in the dry ingredients with a wooden spoon.Pour batter into prepared pan and bake them until they are just set in the center.
Bake them for about 30 minutes and cool them on a wire rack.Flip the brownies on to a cutting board and separate the foil.Cut them into square..these can be stored in an airtight container for about 3 days.
The rest is all Chocolatey!:P
Rava-ulli vada and Kadalaparippu chammanthi..with a sip of tea!
Its quite some time since I put up my posts frequently…its been quite a busy week for me with my kids.My younger one has got his attack of flu as it has started raining here.As every kid likes to play in the rain..hes up with his own pranks…:D
The recipe that I’m posting today is Semolina Onion Vada with Bengal gram chutney.I love hot n spicy fried items when its cold and raining with a hot cup of tea!:P
Heres the recipe
Semolina Onion Vada
3 cups of roasted semolina
3/4 cup all purpose flour
1/2 cup rice flour
5 green chillies chopped
a small piece of ginger chopped
1/2 cup of small onions/shallots chopped
1/2 cup of coriander leaves chopped
1 tsp baking soda
1 cup yogurt
1 cup water
salt to taste
oil for frying
Mix all the ingredients together so that it becomes a sticky dough.Make small balls of the mix ,flatten them to make thin discs with the palm of your hands(make sure to wet ur palms) and fry them out in hot oil till golden brown in colour.
Bengal gram Chutney
1 cup grated coconut
1/2 cup Bengal gram
3-4 dry red chillies
2 small onions
a small ball of tamarind
salt to taste
Grind all the above ingredients in a blender with required amount of water .
For seasoning
1/2 tsp mustard seeds
2 dry red chillies (broken)
5-6 curry leaves
2 tsp coconut oil
Heat a oil in a small pan and pop the mustard seeds.Add the dry red chillies and curry leaves to it and pour it over the chutney.
Serve the hot vadas with chutney!

Chicken Donuts for snack time!
When the holidays wind up and kiddos are off to school the four ‘O’ clock menu gets up on the hit list.Feeding them with snacks at times really gets on my nerves…with a variety every day…:S
This recipe was one that I had written down sometime back..
Chicken Donuts
1/2 kg chicken minced
5-6 green chillies chopped
1 1/2 cups bread crumbs
1 cup of all purpose flour
1tbsp pea flour
2 tbsp ginger garlic paste
1/4 cup pudhina (mint leaves) chopped
1/8 cup curry leaves chopped
2 tsp white pepper powder
1/2 tsp baking powder
2 medium sized potatoes mashed
3 eggs(whisked)
salt to taste
Mix all the above ingredients with the minced chicken to make a dough.Flatten the dough on a cutting board with fingers and cut out shapes with a donut cutter.Deep fry these chicken donuts in oil till golden brown.
Serve them hot with tomato ketchup..
Mutton Roast..with Easter Wishes!

Well my news here is that it was our wedding anniversary yesterday..hmm..its been 8 years nw..For a change my hus was ready to help me out in the kitchen with the menu ..mutton cutlets as appetizers and for lunch it was finalized with Vegetable Pulao and Mutton roast.For a touch of sweetness I made a Strawberry cake.The Mutton Roast is something that I love making coz its quite easy peasy and quite tasty too..
Heres the recipe..
1kg mutton(cut into pieces)
1 cup small onions crushed
2 green chillies julian cut
3/4 cup coconut pieces sliced
1tsp Kashmiri chilli powder
1tsp garam masala powder
For Marination
1 tbsp Coconut oil
2tsp Kashmiri chilli powder
1/2 tsp turmeric powder
2 tsp Coriander powder
1tsp Black pepper powder
1tsp garam masala powder
1tsp vinegar
curry leaves
2 large onions sliced
2 tsp of Ginger garlic paste
Salt to taste
Marinate the mutton pieces well and pressure cook the mutton with 2 cup of water till cooked.
In a kadai on medium flame, pour 2 tbsp of coconut oil .Add in the coconut pieces,1/4 tsp turmeric and a pinch of salt and fry them till golden brown.Now add in the crushed small onions with the slit green chillies and saute till the onions turn translucent.Lower the flame and add in the chilli powder and garam masala.Stir till an aroma comes.Add in the cooked mutton with the stock water in to the sauted masala and let it simmer.Simmer till the gravy becomes very thick.It goes well with Rotis and rice!
Aloo Mutter an impeccable delight!
Aloo Mutter is a dish that my hus always craves for rotis/chapathis..This lovely combi of potatoes and peas really kicks up your taste buds..
Heres the recipe
ALOO MUTTER
3 large potatoes (cut into quarters)
1 1/2 cup green peas
2 large onions chopped
1 and 1/2 tsp of Ginger garlic paste
a pinch of turmeric
1 tsp chilli powder
2 tsp coriander powder
1/4 tsp cumin powder
1 large tomato
1/4 cup curd
1/4 tsp garam masala
Fry and seperate the potatoes and peas in oil.In a heavy bottomed pan fry the onions and saute in the ginger garlic paste and all the spice powders (chilli ,coriander,cumin and turmeric except garam masala).Add blanched tomatoes and simmer till the spices are cooked.Add in the potatoes and peas let it cook covered.Pour in about 1/2 cup of water if the gravy is very thick,When the potatoes and peas are well cooked,add in the well beaten curd and simmer till the gravy becomes thick.Garnish with coriander leaves.
